Apple Pie Bread Pudding

I found this recipe on Pinterest, and have made it my own by using waffles (yes, waffles!!!) instead of bread. It is soooo delicious, and would be great with a scoop of vanilla ice cream. We used half apple pie filling from a can and the other half fresh apples.


  • 14 oz. stale French bread (or waffles)
  • 1 3/4 pound Gala apples
  • 4 Tbsp Butter
  • 2 1/2 Tbsp Flour
  • 2 tsp Apple Pie spice
  • 3/4 Cup Brown Sugar
  • 1 Cup Water
  • 5 Eggs
  • 4 Tbsp Unsalted Butter, melted
  • 2 1/4 Cups Whole Milk
  • 2 tsp Vanilla
  • 1/2 Cup Brown Sugar
  • 1 tsp Apple Pie spice
  • 1 tsp Cinnamon
  1. About 24 hours before preparing, cut bread into 1/2 inch cubes and spread on a large baking sheet, leaving out to get stale (can use waffles instead)
  2. Apple Pie Filling (can use pre-made canned filling instead)
    • Peel, core, and dice apples
    • In medium saucepan over medium heat, melt butter. Add flour, whisking well. Add 3/4 cup brown sugar and stir well.
    • Add apples, apple pie spice, and water; stir and cover. Cook over medium heat until apples are soft, stirring occasionally.
    • Take off heat and strain through a strainer, saving the juices.
    • Let apples cool.
  3. Bread Pudding
    • Preheat oven to 375F and lightly grease a 9×13 casserole dish.
    • Spread bread (or waffles) evenly across the bottom of the casserole dish. Cover with apples
    • In large mixing bowl, whisk eggs, milk, melted butter, vanilla, 1/2 cup brown sugar, apple pie spice, and cinnamon
    • Pour egg mixture all over bread and apples; press down on bread lightly and put into oven
    • Bake 35-40 minutes. Check for done-ness by pressing down in center; if dense and firm, eggs are cooked
    • Take out of oven and pour saved juices from cooking apples on top
    • Serve warm with a scoop of vanilla ice cream on top

This is so delicious with waffles; I have yet to make it with bread. Again, we cheated and used half apple pie filling and half fresh apples, but it was still amazing to eat.
