What do you do with overripe bananas? I know some people just toss theirs, I prefer to turn mine into something delicious!


  • 2 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 1/2 Cup Butter
  • 3/4 Cup Brown Sugar
  • 2 Beaten Eggs
  • 2 1/3 Cup Smashed Banana
  1. Preheat oven to 350 F and grease a loaf pan
  2. In a large bowl, combine flour, baking soda, and salt
  3. In separate bowl, cream butter and brown sugar
  4. Stir in eggs and bananas until well blended
  5. Stir banana mixture into flour mixture until just moistened
  6. Pour batter into prepared loaf pan
  7. Bake 60-65 minutes, until toothpick inserted comes out clean
  8. Cool 10 minutes, then turn out onto wire rack

I have to say, this does make a thick batter, and you may have to leave it in the oven a bit longer than the recommended time, just due to the excess moisture of the bananas. I like to add chocolate chips to mine, or you could add nuts, if you so desire. I don’t have an exact amount of chocolate chips; I just dump them in by the handful and mix until it looks good to me.
