Granma's Banana Pudding

My MIL makes a delicious banana pudding, and the last time she made it, I was sure to stand nearby and take notes! This recipe will fill a 9×13 pan; you can halve it for a smaller 8×8 or 9×9.


  • 2 boxes Nilla Wafers
  • Bananas
  • 2 boxes Cook & Serve Pudding (Banana or Vanilla)
  • 4 Egg Whites
  • Sugar
  • Cream of Tartar
  • Vanilla
  1. Line the bottom and sides of the pan with Nilla Wafers
  2. Cover with a layer of sliced bananas
  3. Repeat layers until just under the edge of the pan
  4. Make pudding according to box directions then pour over cookies and bananas in the pan
  5. Whip egg whites to soft peaks
  6. Add 1 tsp vanilla, 1/4 tsp cream of tartar, and 1/4 cup of sugar, beating to stiff peaks
  7. Add additional 1/4 cup sugar, beating to stiff peaks
  8. Taste between additions of sugar; if grainy, continue beating to smooth
  9. Spread meringue over pudding
  10. Place under broiler in oven, or use kitchen torch, until light brown
  11. Let cool before serving

Banana pudding…I’ve seen it done in so many different ways. My MIL is heavy on the cookie and banana layers, and her meringue is to die for!
